We partner directly with New Zealand producers to source exceptional red meats and fresh fish, which we transform by smoking, charring, and flame-finishing to unlock bold, complex flavours. Each plate is layered with East Asian flair: vibrant dressings, fermented accents, and unexpected umami hits that bring a modern twist to classic tastes.
